Pink Flamingo Brunch CafePink Flamingo Brunch Cafe is a worthy successor to the long-running Sunroom Cafe on State Street. It’s got what you would expect on a brunch menu but elevates the items.

Take, for example, the Huevos Divorciados ($15), which was a visually busy and filling dish. The eggs and an ample amount of black beans, queso fresco and crema were topped with both salsa roja and salsa verde. Altogether, it was enjoyable, as you get so many flavors in every bite.

On the sweeter side, I opted for the apple French toast ($15). The huge and fluffy French toast came with an excellent array of caramelized apples and candied walnuts, and the goat milk caramel was delightful.

Other breakfast-type items include the Swimming Pig ($18.63), which features eggs, grilled salmon, bacon and spinach topped with hollandaise, and the Flaming Burrito ($18.63), an egg-based breakfast burrito that is set aflame tableside with tequila.

Pink Flamingo Brunch CafeOne look at the massive sandwich called Slapping the Bull ($18.63), and I knew I would love it. It’s a grilled beef sandwich on a bolillo roll. The peppers were nicely cooked, the beef was tender, and the mayo and aged cheddar held everything together inside the soft bread. Note: I did need a lot of napkins, but it was worth it.

Another dish I liked was the Blue Water ($12.42). The crab cake was thick, full of crab meat and delicious on its own. Then you layer on the onion crisps to get some bite, and the outstanding chipotle tartar takes it to another level.

The menu also includes appetizers (including oysters), desserts and bowls.

Pink Flamingo Brunch Café is open Wednesday through Sunday.
