Umami Ramen & Dumpling Bar

I like restaurants with cool vibes, and that’s what you get the moment you walk into Umami Ramen & Dumpling Bar, which opens today. Owners Randy Ng & Michael Ding took a page out of the Taqueria Guadalajara playbook and converted a house on Williamson Street, directly across from Madison Sourdough, into a chic restaurant and bar.

I attended an invitation-only, prix fixe dinner on Monday. This does not count as an official review, as the restaurant had a lot of kinks to work out. For example, our drinks took 12 minutes to make (the bar was not busy) and our first course took almost 50 minutes. Our waitress apologized profusely for a “dumpling mishap” in the kitchen. The ones we finally got were a little burned (you can order them steamed or pan fried).

Still, I did enjoy the tuna poke, pork buns and salad with mushrooms. I thought the ramen was a little bland, but it’ll be on my list to try again in a future visit.

The cocktails were creative, combining sake and martinis. I recommend ordering the drink with lychee, as it’s really good. You also can order beer and wine.

The only dessert I tried was the ice cream sandwich, which was outstanding. I’m not sure what was in the chocolate syrup, but it had an “Asian” taste to it, making for a pleasant surprise.

Umami should do well as both a restaurant and bar. The dark colors and uptempo lounge music (though a bit loud) make you feel like you’re in a big city. With the deceiving exterior, you almost think you’re entering a secret club.

Bockfest

On the last Saturday of every February, Capital Brewery throws an outdoor party called Bockfest to feature the release of its Blonde Doppelbock beer. The event includes a 1K Running of the Blondes, live band and staff throwing fish from the roof.

I have to say this event is soooo Wisconsin–drinking beer outdoors in 20-degree weather with snow falling. After being a regular for a few years, I boycotted the event after the debacle of 2008, when Capital Brewery decided to let people in at 11 a.m. but not serve them until noon, allowed too many people to come through the gates (imagine more than 3,000 people wearing winter clothing crammed into a very tight space) and reduced the number of stands selling beer (lines were more than an hour to purchase beer).

Consider yourself forgiven, Capital Brewery. This year attendance was limited to 2,500, and there were plenty of places to buy beer (I never waited more than five minutes). Even better, patrons could purchase the Blonde Doppelbock (one per customer for the whole day) at the beginning of the event instead of later in the afternoon. This helped prevent a mad rush at the time the beer became available, and it allowed people a better way to pace themselves over drinking liters (the preferred volume at the event) of other Capital beers for the first three hours, then drinking an eight percent alcohol beer.

Many people got (free) tickets by attending the Bockfest Ticket Release Party. While the event started at 6 p.m., the first group got in line at 2:45, and by 3 p.m., there were already 12 groups in line. Perhaps an easier way is to book a room at a nearby hotel, which will not only give you a place to crash immediately after binge drinking for several hours, but also two free tickets.

Secret recipes

kfc-logoThis American Life found a published recipe for Coca-Cola in a 1979 edition of the Atlanta Journal Constitution. What’s really interesting is how to make the secret “7x” recipe. It calls for several different oils and most astonishingly, ALCOHOL!

(Coca-Cola apparently can’t sue for trademark infringment because it would have to reveal the actual recipe in court.)

Also “unveiled” recently was the recipe for KFC’s 11 herbs and spices, which I’m going to try soon and see how it similar it tastes. And while I’m at it, here’s the recipe for McDonald’s secret sauce. It reminds me of the scene in “Fast Times at Ridgemont High” in which Brad is training a new employee:

Brad: You got your sliced tomatoes, shredded lettuce, secret sauce.
Arnold: What’s the secret sauce?
Brad: Thousand Island dressing. What’s the secret sauce at Bronco Burger?
Arnold: Ketchup and mayonnaise.
Brad: Gotcha.
