A Nebraska-based brewery has made its way up to Wisconsin Dells with the opening of Pals Brewing Company last fall.
It’s a unique space. The main dining area has picnic tables and a small stage for live music, the host stand is misplaced in the back of the dining area away from the main entrance, the bar area seems more like an auxiliary room, and the giant outside area has turf.
The menu focuses on pizza but is rounded out with a large selection of burgers and sandwiches. If you’re having trouble deciding and have a big appetite, I recommend the Double Bacon Beast Burger ($19.99). It’s comprised of two 1/3 lb patties, cheddar, a ton of bacon strips and secret sauce (akin to a honey mustard/aioli), and it was so good and juicy.
I also enjoyed the Hangover Cure ($13.99), a perfect greasy combo of a fried egg, bacon and cheddar, and the Rodeo King ($14.99), which was topped with bacon, perfectly fried onion rings and BBQ sauce.
You may have noticed that all of these burgers had bacon on them, and the bacon was outstanding, some of the best I’ve had.
You can get more of the bacon on the Nebraskan ($18.99 for 12″), which was a delicious meat-lovers pizza full of hamburger, sausage, pepperoni, bacon and ranch (which I held). Not surprisingly, the Hog Heaven pizza ($18.99 for 12″) sports bacon and Italian sausage, plus Sriracha ranch sauce, blue cheese and Pals-brew marinated mushrooms. The Sriracha ranch was hard to see, but it provided a distinct taste and familiar heat to the pizza.
Among the sandwiches, I tried the Spicy Italian ($17.99). The beef was stacked high, but it was very dry and thus was dependent on the au jus. I felt shorted on the giardiniera, but the few pieces I did get were hot.
All the beers are brewed in Nebraska for now. The session white ale was floral with a bit of citrus, the cascade pale ale reminded me of a wheat beer, the honey wheat was a delightful summer beer, and the nitro stout was much more bitter than I expected.
Pals Brewing Company is open every day for lunch and dinner.
