It had little signage, and when I went online to see what it was called, the restaurant appeared to go by several names.<\/p>\n<p><!--more--><\/p>\n<p>Despite the initial confusion, there should be no confusion that Chopsticks serves delicious Chinese food.<\/p>\n<p>Among them is a nice selection of dim sum (appetizers), including stuffed sticky rice in lotus leaf ($6.95) and siu mai ($5.95). The Pork with Preserved Egg Congee ($6.95) was delightful and hearty. The congee had a perfect thickness in which the toppings didn&#8217;t sink to the bottom. Meanwhile, the bits of pork and egg, along with the green onion, brought just enough flavor.<\/p>\n<p>I also enjoyed the short rib with honey sauce ($8.95). It was a completely different flavor from the Korean version of this dish. This version was slightly sweet and fragrant from the ginger and pieces of red pepper.<\/p>\n<p>The rest of the menu is categorized by protein, including seafood.\u00a0The salt and pepper calamari ($19) came in strips with a tempura batter and lightly salted. The &#8220;pepper&#8221; from the &#8220;salt and pepper&#8221; refers to slices of slightly sauteed red pepper plus onion and green onions. They paired well with the calamari, which was tasty as-is, but I felt a dipping sauce could have helped.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-8914\" src=\"https:\/\/www.eatdrinkmadison.com\/blog\/wp-content\/uploads\/2024\/03\/20240229_115741-300x180.jpg\" alt=\"Chopsticks\" width=\"300\" height=\"180\" srcset=\"https:\/\/www.eatdrinkmadison.com\/blog\/wp-content\/uploads\/2024\/03\/20240229_115741-300x180.jpg 300w, https:\/\/www.eatdrinkmadison.com\/blog\/wp-content\/uploads\/2024\/03\/20240229_115741-1024x616.jpg 1024w, https:\/\/www.eatdrinkmadison.com\/blog\/wp-content\/uploads\/2024\/03\/20240229_115741-768x462.jpg 768w, https:\/\/www.eatdrinkmadison.com\/blog\/wp-content\/uploads\/2024\/03\/20240229_115741-1536x924.jpg 1536w, https:\/\/www.eatdrinkmadison.com\/blog\/wp-content\/uploads\/2024\/03\/20240229_115741.jpg 2000w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>I liked the stir-fry chicken and eggplant ($12) dish. The chicken was cubed, lightly breaded and fried, with a soy sauce-like flavor. The eggplant, along with the onions, red peppers and green peppers, were perfectly sauteed to add a contrasting texture and taste.<\/p>\n<p>Other entrees include Singapore mei fun with shrimp and BBQ pork ($11), roasted pork in house sauce ($13) and ginger &amp; scallion beef ($15).<\/p>\n<p>Chopsticks is open for lunch and dinner every day.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I first spotted Chopsticks while walking on Regent Street last fall.
