That’s why I was pleasantly surprised to learn that Jason’s Deli launched a ghost kitchen last year called Boise Bill’s that features baked potatoes.

First, you should know that the baked potatoes are huge, around double the size of the baked potatoes you typically get at a restaurant. Also, they are served scorching hot.

I was intrigued by the idea of a meatball sandwich on a baked potato in ordering the Meat Baller ($12.62). You get eight fairly sizeable and tender meatballs, which I enjoyed. I thought the marinara sauce was just okay, and the concoction needed more provolone cheese, but it’s certainly worth a try.

The Jumbo Gumbo ($11.57) also was pretty tasty. In this case, the buttery gumbo is absorbed into the potato. So even after you eat all the shrimp and green onions, you’re not eating a plain baked potato.

Other potatoes include the Big Boise ($11.57), which sports chopped BBQ pork, cheddar cheese and butter, and the Rancher’s Club ($14.85), which comes with smoked turkey, ham, chopped bacon, cheddar cheese, butter, sour cream, green onions and ranch dressing.

Sides are comprised of an expensive side salad ($8.30) and a fruit cup ($4.67). Desserts include cookies and a brownie.

Boise Bill’s is open for lunch and dinner every day. You can order it through GrubHub, DoorDash and UberEats.

Too many ghost kitchens these days are focused on wings.
